“Old-world pastry shops provided inspiration... European-style
tortes are the bakery's "main game". Among it's 30 varieties
are it's signature Suisse almond torte, a dense almond cake layered
with imported raspberry jam and French buttercream. Other tortes
beckoning from the pastry case include the raspberry Chambord and
white chocolate empress, which is frosted using white chocolate
truffles. On a typical weekend, (the Suisse Shop) sells more than
75 tortes, with the "cute cake" size-five inches across-being
particularly popular at $14 apiece. There's one common ingredient
found in everything emerging from their ovens: passion."
